Cinco de Mayo is just around the corner. While might ignore this celebration, you don’t have to twist my arm to get me to enjoy margaritas and Mexican food. A traditional five course meal consists of soup, an appetizer, salad, main course, and is rounded out with dessert. You don’t have to get fancy for this one – but here are five recipes that reach beyond the taco.
Soup: Try Mexican street corn tortilla soup. It’s made in 30 minutes so you don’t have to spend too much time on this delicious dish.
Appetizer: Creamy jalapeno and avocado salsa. This spicy salsa is packed with some heat but tones everything down with sour cream and lime.
Salad: Dorito taco salad. Classic taco salad favorites combine with cheesy Doritos. Sign me up.
Main Course: Chicken and corn enchiladas with creamy green sauce. This recipe will please a whole crowd.
Dessert: Flourless Mexican chocolate cupcakes. Spicy and sweet chocolate cupcakes with just a dash of cayenne pepper.
Of course, all of these delicious items need to be accompanied by some margaritas. Check out some delicious margarita round ups here.
