French fries are an easy side dish that you can throw on salads, serve up with sandwiches and keep the kids happy. With a little planning ahead you can easily make homemade fries instead of a bag of frozen fries. These garlic parmesan fries are baked and loaded with good garlic flavor.

Serves: 2 (double or triple this for family meals)

Ingredients:

  1. 3 medium sized potatoes (use about 1 1/2 potatoes per serving, I made this for two)
  2. 3 cloves fresh garlic (use 1 clove of garlic per potato you use)
  3. 2 teaspoons vegetable oil
  4. 2 teaspoons garlic powder
  5. 1 teaspoon black pepper
  6. Shredded parmesan cheese
  7. Salt to taste
  8. Optional but recommended – fresh basil leaves, shredded

Directions: 

  1. Wash and prepare your potatoes, I sliced mine lengthwise and into thin strips for skinny fries.
  2. Peel the garlic cloves and slice them into pieces.
  3. Add the potatoes and garlic to a bowl, fill with water until the fries are covered and place plastic wrap over the bowl for 2 – 3 hours. This is how you add a little extra garlic flavor to your fries.
  4. Pre heat the oven to 350 degrees.
  5. Drain and pat the fries and garlic dry and place them on a large nonstick baking sheet.
  6. Drizzle with oil, garlic powder and black pepper.
  7. Bake for about an hour, checking the fries halfway through and flipping them.
  8. Sprinkle with parmesan cheese, salt and basil right out of the oven.
