Yields 2 drinks

3 ounces prickly pear syrup

1 ½ cups freshly squeezed orange juice

3 ounces silver agave tequila (I like the organic Dulce Vida)

3 ounces Prosecco or champagne (can substitute Topo Chico or other sparkling water)

Pour the prickly pear syrup into the bottoms of two tall glasses. Squeeze the oranges, reserving two slices for garnish. Pour the juice into a pitcher and stir in the tequila. Trickle the juice mixture slowly down the side of the glasses with the syrup in them, so as not to disturb the layering. Finish with a splash of Prosecco, champagne, or sparkling water and garnish with an orange slice.
