Bud, “the Pieman” Royer is the funky founding father of Royers Round Top Café and Royers mail order pies. Bud and his wife, Dr. Karen, along with their four children, moved to Round Top in 1987, where the clan took over the tiny 40-seat Round Top Café.  Despite no culinary training or kitchen experience, Bud and his family have built the business into a well-recognized Texas institution.

The menu at Royers Round Top Café may surprise you.  Instead of the typical country fare, you’ll find “a Texas country bistro serving gourmet comfort food.”  Although Round Top is a town of only 90 people (it’s about an hour’s drive from both Austin and Houston) word of mouth has traveled far, making a pilgrimage to the cafe a Texas foodie favorite.
