SWEET & SPICY GAME HENS, An adventurous spicy twist on honey glazed basted hens served with delicious baby potatoes with rosemary.
Ingredients serving 4:
4 tablespoons butter
3 tablespoons honey
2 teaspoons chili powder
1 tablespoon orange juice
2 Cornish hens
2 pounds small potatoes, baby Yukon gold or baby red, white and blue skin potatoes
2 large shallots
2 sprigs fresh rosemary
2-3 tablespoons extra virgin olive oil
Salt and pepper to taste
Preheat oven to 350°F.
Melt butter over low heat and stir in honey and chili powder; mix well.
Stir in orange juice, salt and pepper and remove from heat.
Rinse game hens well and pat dry with paper towels.
Place hens in a baking dish and into oven.
Baste several times with the sweet and spicy mixture.
Bake for approximately 45 minutes or until well browned and hens reach an internal temperature of 165 degrees.
Remove from oven and let rest 10 minutes.
Lightly brown potatoes in an oven ready skillet in olive oil and chopped rosemary, salt and pepper, for 5 minutes over high heat.
Move skillet to 350 degree oven and roast until tender.
Cut hens in half and serves with potatoes and your favorite vegetables.
