July 4th is tomorrow and what better way to celebrate than to dive right into some sweet festive treats. From cream pies to milkshakes to ice pops, popcorn, and more recipes with fresh berries, top your patriotic celebration with these desserts that are sure to thrill the tastebuds.

No-Bake Berry Cream Pies in Jars

YIELDS: 3-4 servings

INGREDIENTS:
1 pint chilled heavy whipping cream
Vanilla stevia drops (or your favorite sweetener) to taste
12 sheets Erewhon Organic Honey Graham Crackers
1/4 cup melted coconut oil
1 pint fresh or frozen raspberries
Blueberries
Strawberries
A few jars & ramekins (6 to 8 ounce size)

INSTRUCTIONS:
Whipped Cream: Pour chilled cream into a stand mixer with a whisk attachment. Start on medium speed & then increase to high speed until cream is whipped to a consistency you like. Sweeten to taste.

Raspberry Mash: Mash fresh raspberries with a mortar & pestle or fork until they are saucy. If using frozen berries let them defrost & do the same thing. Sweeten to taste, if needed.

Pulse the graham crackers in the food processor until you get a fine crumb. Transfer to a bowl and mix with melted coconut oil.

Assemble: Layer the raspberry sauce, whipped cream and graham cracker crumbs in jars & ramekins. Alternate layers so they look pretty. Top with fresh blueberries, strawberries, more whipped cream and graham cracker crumbs. 

Red, White and Blue Milk Pops

YIELDS: 10 milk pops

INGREDIENTS:
1 3/4 cups milk
1 tablespoon honey
1/4 teaspoon vanilla
6 oz. blueberries
6 oz. strawberries, diced

INSTRUCTIONS:
In a bowl, whisk together the milk, honey and vanilla. Set aside.

In another bowl, combine the blueberries and strawberries. Evenly divide the berries into 10 ice pop molds or paper cups. Pour the milk mixture over the berries. Top with sticks or holders.

Freeze until frozen solid.

Strawberry Blueberry Mini Cheesecake Trifle

YIELDS: 6-7 Mini Desserts, or 4-5 moderate sized desserts

INGREDIENTS:
Graham Cracker Crumble
1 1/2 cups graham cracker crumbs (about 10 full sized crackers)
1/3 cup butter, melted
1 Tablespoon sugar

Fluffy Cheesecake
1- 8oz block cream cheese
1/2 cup powdered sugar
2 teaspoons fresh lemon juice
2 tablespoons milk (any fat content)
2 cups cool whip, or freshly whipped cream
Fresh berries (strawberries and blueberries shown)

INSTRUCTIONS:
Graham Cracker Crumble
Crush crackers in a large ziplock type bag. Pour crumbs, sugar and melted butter into a bowl and stir until fully combined. Pour into a 9″x13″ casserole dish and press into a even layer. Bake at 350*F for 10-12 minutes, until light brown. Allow to cool.

Fluffy Cheesecake
1. Beat cream cheese in the bowl of an electric mixer until smooth. Add powdered sugar, beat to combine. Add lemon juice and beat until fully incorporated. Add milk, and combine.
2. Fold cool whip or feshly whipped cream into cream cheese mixture. Spoon into dessert dishes, or for smaller dishes, fill a large piping bag and pipe into dessert dishes.

Dessert Assembly
To create the dessert as shown, layer a spoonful of graham cracker crumble, then a layer of cheesecake, fresh chopped strawberries, more cheesecake, fresh blueberries, and a final layer of cheesecake.

Red, White and Blue Milkshake

INGREDIENTS:
1 cup vanilla ice cream
1 cup strawberries
1/4 cup ice
3-4 tbsp sugar
Fresh blueberries

INSTRUCTIONS:
Blend vanilla ice cream in blender. You want the milkshake to be very thick so that you can layer the strawberry and blueberries on top. If you need to, add a tablespoon of milk to somewhat thin the batter. Pour into a tall glass

Blend strawberries, sugar and ice until almost smooth. Strawberries should be tiny chunks, ice should disappear. Carefully spoon strawberry slushi on top of vanilla milkshake. Add fresh blueberries on top.

Tutti Frutti Popcorn

YIELDS: 4-6 servings

INGREDIENTS:
1/4 cup Unrefined Coconut Oil
1/3 cup Popcorn
Stevia Powder (to taste)
Fine Sea Salt
Dried Fruits 1/2 cup each, Cherries, Bananas, Blueberries & Strawberries

INSTRUCTIONS:
Heat the oil and popcorn in a large, deep metal pot over high heat. Have the pot lid and a large bowl handy. The oil will sizzle and the popcorn will start to pop. Cover with the lid and agitate/slide the pan around vigorously. When about to overflow dump the popcorn into the bowl. Continue to do this until all of the popcorn is popped.

When popcorn is hot toss quickly with stevia powder and salt to taste. When it cools toss in the dried fruits.

Stars and Stripes Cheesecake Shots Cupcaketini

YIELDS: 8 mini cuptinis

INGREDIENTS:
2 pkg. (8 oz. each) cream cheese (softened)
1/6 cup sugar
1/4 tsp. vanilla
4 oz. Cool Whip (melted)
5 graham crackers (finely crushed)
Berries

INSTRUCTIONS:
Mix cream cheese, sugar and vanilla until smooth. Stir in cool whip gradually. Fill glasses half way with cream cheese mixture. Top with 1 tsp graham cracker crumbs.

Level crumbs by shaking the glass gently. Add more cream cheese mixture to fill up the glass. Decorate with additional graham cracker crumbs and berries and a star pastry for good measure.

Refrigerate 4 hours or until firm. Serve chilled.

Coconut Berry Popsicles

YIELD: 8 popsicles

INGREDIENTS:
17 oz container of coconut water
2 tbs of sugar + 1 tbs hot water to make simple syrup
1/2 cup blueberries
1/2 cup finely chopped strawberries

INSTRUCTIONS:
In a medium mixing bowl, combine coconut water and simple syrup. Mix until well combined.

Separate the berries between the popsicle molds. Slowly fill the molds with coconut water about 3/4 of the way, so that it doesn’t overflow when you add the sticks. Freeze for at least 5 hours.
