Pink with prickly pear? It sounds like a drink meant for cowgirls!

A prickly pear is the "fruit" of a prickly pear cactus. Don't let the prickles scare you, when ripe, the fruit has a juicy and soft inside that you can cook with or make drinks with! It is sweet and has been described to taste similar to melons.

Prickly Pear Lemonade

Summer is just around the corner, meaning you need a refreshing, sweet, and just enough tartness for those hot days! Made in New Mexico shares their best recipe for it. Add 8 ounces of lemon juice, 1/3 cup of prickly pear syrup, and 2 cups of sparkling water. Stir it all together and serve over ice!

Prickly Pear Smoothie

Fashion influencer, Kens, a.k.a Western Gringa, shared her favorite smoothie recipe last year. Blend 1 1/4 cups of frozen fruit, 2 tablespoons of Greek yogurt, 2 tablespoons of honey, 1/4 of prickly pear syrup, and half a cup of milk for this one!

Prickly Pear Mojito

Cool, refreshing, with a little kick-- the Prickly Pear Mojito from Thai Caliente! All you need is 2 ounces of rum, 1 ounce of lime juice, 1 ounce of prickly pear cocktail mixer, half an ounce of agave syrup, and sparkling water to top. Add all your ingredients to a glass, stir, and add ice. Now kick back and enjoy!

Prickly Pear Margarita

A favorite of Cowgirl editors, try the Prickly Pear Margarita! You'll need: 2 ounces tequila, 2 ounces prickly pear syrup, ½ ounce triple sec (plus 1 tablespoon to coat the rim of the glass), 3 tablespoons fresh lime juice, 2 teaspoons coarse salt, and 2 teaspoons turbinado sugar.
